BBQ Butternut caramelized with Sweet Apricot
Serves 4

1 butternut, peeled with a veggie peeler, and sliced into 1/2 inch rounds
1 cup of Nando’s Sweet Apricot Cooking & Grilling Sauce
3 tablespoons of butter

Melt butter and mix with Nando’s Sweet Apricot Cooking & Grilling Sauce. Prepare BBQ to medium high. Baste rounds of butternut with sweet apricot-butter glaze, turning frequently until cooked and golden brown. Approximately 15 minutes



Peri-Quick Cornbread

1 box corn muffin mix
1/2 cup grated sharp cheddar cheese
1/2 cup canned corn
1/2 cup Nando’s Roasted Reds
1 tsp. Nando’s extra hot Peri-Peri sauce!

Follow directions for corn muffins then add all other ingredients and bake as directed. However, they may need to bake a few minutes longer than box directions.



Lemon Peri Rice Salad
Serves 6

4 cups cooked white rice
2 cups of chopped Vine ripened tomatoes
1/2 cup Kalamata olives, pitted and chopped
1/3 cup capers
1/2 jar of Nando’s Lemon with Peri-Peri Cooking Sauce
3 tablespoons Nando’s Peri-Peri Pepper Sauce (any variety)
Salt & pepper to taste

Mix rice, chopped tomatoes, capers, olives well. Add Nando’s Peri-Peri Pepper Sauce, to mixture and stir thoroughly. Season to taste with salt and pepper. This salad is delicious warm, cold or room temperature.
